BAKE: Red Velvet Cupcakes

Red? mine are more on the brown side due to my love of cocoa, a whole tube of red food colouring could not make these cakes red.

This cake is traditionally a Valentines Day treat and there is no better person to turn to than the queen of food seduction, Nigella! It’s an American dessert but the Brits have adopted it quicker than the Kardashians.

As it’s a Valentines dessert (and maybe because he’s a trained chef) I asked Mark to join me in baking these. Which resulted in a frosting competition which led to his cakes being centre of most photos.

The recipe calls for buttermilk which is hard to find so we made our own, it’s so simple it’s milk mixed with lemon juice. The frosting was our own too which is listed below. Why not try it yourselves?


What you will need:

250g Plain flour, sifted

2 tablespoons of cocoa, sifted

2 teaspoons of baking powder

1/2 teaspoon bicarbonate of soda

100g unsalted butter

200g caster sugar

19g red gel food colour

2 teaspoons of vanilla extract

2 large eggs

175ml buttermilk (or 250ml of milk mixed with a teaspoon of lemon juice)

1 teaspoon cider vinegar

For cream cheese frosting:

180g cream cheese

110g butter

2 teaspoons of vanilla extract

500g icing sugar

Method

Preheat the oven to gas mark 3 and line 2 muffin trays with paper cases.

Cream the butter and sugar together, add all of the food colouring and then add vanilla.

In a separate bowl mix all the dried ingredients together then add a tablespoon of it to the butter and sugar. Mix well and add 1 egg, add around 2 tablespoons more before adding the second egg. When the last of the flour is added you can then add the buttermilk and vinegar. Mix well.

Divide the mixture between the 24 cases and bake for 20 minutes.

Once cooked transfer to a wire rack to cool.

To make the frosting mix the cream cheese and butter together before adding the sugar and vanilla. Continue to mix until soft and fluffy. The frosting can only be done once the cakes are completely cool.
